This bar is the result of a true Donegal collaboration with Croithlí Distillery, bringing together craft chocolate and craft whiskey in a thoughtful and balanced way. We start with single-origin cacao beans, which are soaked for two months in ex-Croithlí whiskey casks before being carefully dried, roasted, and made into chocolate in our Donegal workshop.
This slow infusion gives the chocolate a subtle and elegant whiskey character — not sharp or boozy, but gently woody and warming, with a smooth, lingering finish. The deep cocoa notes of the 63% dark chocolate are lifted by soft oak and malted tones, creating a bar that’s refined, comforting, and quietly complex.
It’s not about tasting whiskey in chocolate, but about capturing its essence — a respectful meeting of two crafts and two local makers. A truly special Donegal collaboration.
